1 Bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Slotted spatula, 1 Grill pan, 1 Citrus juicer, 1 Mandoline (or box grater), 1 Aluminum foil

Preparation steps

Slice beef fillet in half lengthwise, then rub with pepper.

Grill beef on a hot grill pan or charcoal grill for 5-6 minutes on each side.

Remove meat from pan or grill, wrap loosely in aluminum foil and let rest for 30 minutes.

Squeeze 6 tablespoons of lime juice. Halve chile peppers lengthwise, remove seeds, rinse and pat dry. Finely dice chiles.

In a bowl, combine chiles with lime juice, fish sauce and sugar, stirring until sugar has dissolved.

Peel and cut shallots into very thin strips. Clean, wash and cut scallions into 1.5 cm (approximately 1/2-inch) pieces.

Rinse cilantro and mint, shake dry, pluck leaves and coarsely chop.

Thinly slice beef fillet.

Place beef in a bowl and mix with the shallot, scallions, cilantro, mint and chile-lime sauce.

Rinse cucumber, wipe dry and cut crosswise into 3 pieces. Shave cucumber into thin slices using a mandoline (or box grater). Divide cucumber slices among serving plates or bowls, top with beef salad and serve, with rice and grilled pineapple if desired.
