60 milliliters Sake
2 tablespoons Mirin
1 teaspoon peppers (ground)
1 tablespoon brown sugar
500 grams Salmon with skin (flat piece)
2 tablespoons Black tea
vegetable oil (for the pot)
250 grams black Pasta
salt
1 Red chile pepper
2 scallions
1 tablespoon Fish sauce
2 tablespoons Lime juice
brown sugar
cilantro (for garnish)

Preparation steps

1.

Heat soy sauce with sake, mirin, pepper and brown sugar in saucepan to form marinade and stir until sugar dissolves. Let cool.

Rinse salmon, pat dry and cut into 4 pieces. Transfer to shallow dish and coat with marinade. Let steep for approximately 15 minutes.

Line pan with aluminum foil and sprinkle with black tea. Make a hole and brush with oil. Cover and heat until pan begins to smoke. Quickly place salmon (skin side down) in pan, cover and smoke for about 20 minutes.

Cook pasta in salted water until al dente. Rinse and chop chile. Rinse scallions, cut whites into thin rings and cut greens into fine strips. Allow pasta to drain, mix with chile and scallions and season with fish sauce, lime juice and a pinch of sugar.

5.

Remove salmon from heat and let stand in closed pan for a few minutes. Serve salmon topped with salad and cilantro.
