For the puff pastry
200 grams Pastry flour
100 grams cold butter
1 pinch salt
1 teaspoon sugar
1 egg
For the caramelized apples
750 grams Apple
75 grams butter
200 grams sugar
200 grams clotted cream (Or whipped cream to taste)

Preparation steps

For the puff pastry: Combine the flour, salt and sugar, make a well in the center, sprinkle the chopped butter around the edges and add the beaten egg to the well. Quickly chop the ingredients together with a knife until crumbly then quickly knead until smooth with your hands. Form into a ball, wrap in plastic wrap and chill for about 30 minutes.

For the caramelized apples: Rinse the apples, core and slice.

Grease a cast iron pan with 50 grams (approximately 3 1/2 tablespoons) butter. Sprinkle with a thick layer of sugar (around 100 grams) (approximately 1/2 cup) and then arrange the apple slices in layers over the sugar.

Heat the pan over medium heat for about 15 minutes. Remove from the heat when the sugar begins to caramelize. Let cool briefly then sprinkle with the remaining sugar and spread the remaining butter over top.

Roll out the dough and place over the apples, pressing the edges down into the pan.

Bake in a preheated oven (225°C) (approximately 425°F) for about 30 minutes. Carefully invert onto a serving platter, let cool slightly and serve with clotted cream.
