125 grams butter
200 Pastry flour
1 packet Vanilla sugar
4 eggs
6 Mandarin orange

Preparation steps

For the pâte à choux: Bring the water to a boil with the salt, butter and sugar. Add the flour all at once and stir until combined. Continue cooking until the dough leaves a residue on the bottom of the pan, around 2 minutes, then transfer to a mixing bowl and let cool slightly. Gradually stir in the eggs, 1 at a time, until smooth and glossy.

Grease a baking sheet and lightly dust with flour. Transfer the dough to a piping bag fitted with a large star tip, pipe 12 heart shapes on the prepared baking sheet and bake in a preheated oven at 200°C (approximately 400°F) for 20-25 minutes. Let cool in the oven with the door ajar. Cut the cream puffs in half horizontally. Whip the cream and vanilla sugar until stiff, transfer to a piping bag and stuff the cream puffs with the whipped cream and mandarin oranges to serve.
