Tacos with Mince Filling
Peel and finely chop the carrot, garlic and onion. Mix together.
Rinse the bell pepper, cut in half, remove the seeds and dice.
Rinse the tomatoes, remove the stems and chop.
Sauté the carrot, garlic, chile pepper and onion in hot oil. Add the ground beef and cook until crumbly. Add the bell pepper and tomatoes and simmer approximately 5 minutes. Season well with salt and pepper.
Heat the taco shells briefly under the broiler, watching carefully the entire time. Fill each shell with the beef and salsa mixture. Serve sprinkled with one dollop of sour cream and some coriander.
