For the cake
4 egg yolks
4 egg whites
125 grams sugar
1 packet Vanilla sugar
80 grams Pastry flour
60 grams cornstarch
1 teaspoon Baking powder
For the filling
300 grams Whipped cream
80 grams sugar
1 packet Vanilla sugar
5 sheets white gelatin
1 gram ripe Mangoes (diced)
powdered sugar (for dusting)

Preparation steps

For the cake, beat egg whites until stiff. Sprinkle with vanilla sugar. Mix egg yolks and sugar until creamy. Add cornstarch, flour and baking powder. Stir and fold in egg whites. Spread batter on a baking sheet lined with parchment paper and bake at 175°C (approximately 350°F) for 12-15 minutes. Flip over onto a damp tea towel and cool.

For the filling, soak gelatin in cold water.

Beat cream with sugar and vanilla sugar until stiff. Add wet gelatin to a small saucepan and dissolve over low heat. Stir in 3 tablespoons of cream, mix well and pour back into cream. Spread cream over cake, top with diced mango and roll using cloth. Chill for at least 3 hours in the refrigerator. Serve dusted with powdered sugar.
