Ingredients

For the dough
2.333 cups
white Bread flour (plus extra for dusting)
1 ½ teaspoons
quick-rising active dry yeast
2 teaspoons
½ teaspoon
¼ cup
butter (melted)

For the filling
1 cup
low-fat Quark
½ cup
xylitol (scant)
2 tablespoons

1 teaspoon
To glaze

Preparation steps

1.
For the dough: place all the ingredients in a bowl and mix well to a dough. Knead on a lightly floured surface until smooth and elastic.
2.
Shape into a ball and put into an oiled bowl. Cover with cling film and leave to rise in a warm place until doubled in size.
3.
Line 2 baking trays with non-stick baking paper.
4.
For the filling: mix together all the ingredients until well blended. Chill until needed.
5.
Knock back the dough and knead lightly. Divide into 8 pieces and roll each piece into a ball.
6.
Roll out each piece on a lightly floured surface into an oval shape.
7.
Spread the filling over each piece and roll up the dough ovals to form cylinders. Pinch along the seams to seal.
8.
Roll the cylinders with your hands to neaten and lengthen. Coil into loose spirals and tuck the ends underneath.
9.
Place on the baking trays. Cover with cling film and leave to rise in a warm place until doubled in size.
10.
Preheat the oven to 180°C (160° fan) 350°F gas 4.
11.
Brush the buns with beaten egg and bake for about 20-25 minutes until golden. Place on a wire rack to cool.
