1 teaspoon Lemon peel
4 centiliters Peach liqueur
4 tablespoons sugar
1 generous pinch Baking powder
375 milliliters milk

4 ripe Peaches
150 milliliters Whipped cream
1 packet Vanilla sugar
powdered sugar (for dusting)

Preparation steps

1.

Separate the eggs and beat the egg yolks with the flour, lemon zest, liqueur, sugar, baking powder and milk and let rest for about 20 minutes.

Heat the waffle iron and lightly grease.

Beat the egg whites with a pinch of salt until stiff and fold into the batter. Pour 1-2 tablespoons of batter into the waffle iron, distribute evenly and cook in batches until waffles are golden brown.

Keep the waffles warm if desired in an oven preheated to 80°C (approximately 175°F) top and bottom.

5.

Meanwhile, blanch the peaches, rinse with cold water, halve, pit and cut into thin wedges.

6.

Beat the cream with the vanilla sugar until stiff. Place the waffles on plates, dust with powdered sugar and garnish with a few peach slices and a dollop of cream.
