1 ½ cups all-purpose flour (sifted)

¼ cup honey
2 Tbsps caster sugar
½ cup Whole milk
1 tsp cream of tartar
1 tsp baking soda
1 small egg (beaten)

Preparation steps

1.
Preheat the oven to 190°C (170°C fan) | 375°F | gas 5. Grease and line a couple of baking trays with greaseproof paper.

Sift together the flour, cream of tartar and bicarbonate of soda into a large mixing bowl.
3.
Rub the cubed butter into the flour until it resembles breadcrumbs. Stir through the honey and sugar, then add the milk and stir until you have a rough dough.
4.
Turn the dough out onto a lightly floured work surface and knead gently for a few minutes until more even. Roll the dough into a round roughly 2 cm thick. Punch out rounds of dough using a 6-7 cm cookie cutter.
5.
Gather up the remaining dough and re-roll to 2 cm thickness before punching out more rounds of dough.

Arrange on the baking trays and brush their tops lightly with the beaten egg.
7.
Sprinkle a teaspoon of sesame seeds on top of each and bake for 15-20 minutes until golden and risen.
8.
Remove from the oven and transfer to a wire rack to cool before serving.
