Heat the oven to 120°C (100°C in a fan oven), 250°F, gas 1/2 and line a baking tray with grease-proof paper.
Beat the egg whites with the lemon juice until stiff and gradually trickle in the icing sugar. Beat until glossy. Spoon into a piping bag with a star nozzle and pipe small meringues onto the baking tray. Bake for around 50-60 minutes until crispy. The meringues should remain as light in colour as possible.
Remove from the oven and leave to cool.
