Sweet Squash Fritters
Peel, core and finely grate the squash. Mix with the egg, sugar and cinnamon. Mix in the flour if too wet.
Heat the oil in a nonstick skillet. Shallow-fry 2-3 tablespoonfuls of squash mixture for about 15 minutes over medium heat, until golden brown on both sides. Dust with powdered sugar and serve immediately.
