Sweet Soft Crepes with Ice-cream

Beat the eggs until stiff. Place the flour, egg yolks, baking powder, milk, 2 tbsp honey and a pinch of salt in a bowl and and mix well with an electric hand mixer. Leave to rest for 30 minutes then fold in the egg whites.
Heat some butter in a pan and fry spoonfuls of the mixture on each side for 1-2 minutes until golden brown. Keep the finished pancakes warm in the oven (around 80°C) until they are all ready.
Arrange the pancakes on plates and drizzle with some honey. Add the ice cream and sprinkle with a little lemon zest and the grated chocolate. Serve immediately.
