Sweet Saffron Pudding
Bring milk with 200 ml of (approximately 6 3/4 ounces) water, sugar and saffron to a boil. Simmer for 1 minute then set aside. Cut apricots into slices. Heat clarified butter and add semolina, sauté while briefly stirring.
Combine sweetened milk and apricots into semolina mixture. Bring to a boil and let cook for 3 minutes, stirring until mixture thickens. Distribute into bowls and serve warm or cold.
