For the dough
120 grams Pastry flour
1 tablespoon Semolina
1 generous pinch Dry yeast
60 milliliters lukewarm milk
30 grams sugar
30 grams butter
1 egg yolk
Pastry flour (to work)
For the topping
250 grams mixed Berry (strawberries, raspberries and blueberries)
120 grams Mascarpone
1 egg yolk
2 tablespoons Vanilla sugar
mint (for garnish)

Preparation steps

1.

For the dough, put the flour with the semolina in a bowl and mix with the active dry yeast, milk, sugar, butter and egg yolk. Knead into a smooth dough that no longer sticks to the bowl edges. Cover the dough with tea towel and let rise for about 30 minutes.

Knead the dough again on a floured surface and roll out to a pizza base (diameter about 26 cm) (diameter approximately 10 inches).

Place the pizza base on a baking sheet lined with parchment paper and prick several times with a fork. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for pre-baking for about 10 minutes.

For the topping, rinse the berries, pick, trim and pat dry. Cut the strawberries in half or quarter depending on the size.

Mix the mascarpone cheese with the egg yolk and vanilla sugar until smooth.

5.

Remove the pizza base from the oven and spread the berries over it, leaving a small margin. Spread the cheese mixture over it and bake in the oven for about 10 minutes more until golden brown.

6.

Remove the pizza from oven and serve garnished with mint.
