Sweet Pasta with Plum Sauce
Toast the walnuts in a dry skillet, sprinkle 1 tablespoon powdered sugar over and stir until the sugar melts. Cool on a plate.
Rinse the plums, remove the pits and quarter the plums. In a dry skillet, melt the remaining tablespoon powdered sugar over low heat until caramelized. Add the plums, cloves, cinnamon and the vanilla bean and saute 1- 2 minutes. Add the granulated sugar and deglaze with port wine and plum brandy. Remove from the heat, stir in the cold butter and swirl the pan so that the sauce is creamy.
Cook the pasta according to package directions until al dente. Drain, then toss in a pan with the butter and cook until well coated.
Arrange the noodles on warmed plates, top with the plum sauce and sprinkle with caramelised walnuts.
Serve with vanilla ice cream.
