Sweet Mousse Gateau

- 1 ⅔ cups Cookie (digestive)
- ½ cup butter (melted)
- 3 ½ cups plain Chocolate (chopped)
- 2 eggs (beaten)
- 4 egg yolks (beaten)
- 2 cups cream (48% fat)
- 0.333 cup powdered sugar
- To decorate
- ⅔ cup plain Chocolate (chopped)
Grease a springform 23cm|9" flan tin.
Mix together the biscuit crumbs and butter and press into the base of the tin.
Melt the chocolate in a large heatproof bowl over a pan of simmering (not boiling) water. Allow to cool slightly.
Gradually whisk in the eggs and yolks until blended.
Whisk the cream and icing sugar until thick. Fold into the chocolate mixture until well mixed.
Spoon into the tin, cover with cling film and chill overnight.
Remove from the tin and decorate with chocolate pieces.
