Sweet Egg Souffle
Separate the eggs. Whisk the flour, salt, powdered sugar, vanilla sugar and egg yolks together and let soak for 30 minutes. Soak the raisins in rum. Beat the egg whites until stiff.
Stir the dough again thoroughly and fold in the egg whites. Heat butter in a frying pan, place the dough in the pan and cook 1 inch thick pancakes.
Tear the pancake into small pieces, add the rum raisins and sprinkle with powdered sugar. Let caramelize in a hot oven.
Sprinkle the pancakes before serving with powdered sugar.
