½ cup caster sugar
1 cup Whole milk
1 cup whipping cream
1 teaspoon vanilla extract

Preparation steps

Preheat the oven to 150°C (130°C fan) | 300F | gas 2.

Combine the sugar and water for the caramel in a wide saucepan over a medium-high heat, swirling the pan occasionally, until the caramel turns golden in colour.

Divide the caramel between the base of 4 individual flan moulds and tilt to coat the surfaces evenly with the caramel. Set to one side.

In a large mixing bowl, whisk together the eggs, egg yolk and remaining caster sugar until smooth, then whisk in the milk, cream and vanilla extract.
5.
Pour the mixture, discarding the vanilla pod beforehand, onto the caramel and arrange the moulds in a roasting tin lined with a damp tea towel.
6.
Fill the roasting tin with boiling water so that it comes halfway up the side of the moulds.
7.
Bake in the oven for 35-40 minutes until just set, then remove from the oven and allow to cool before chilling.
8.
Before serving, loosen the flans using a sharp knife before inverting onto serving plates.
