Sweet Berry Pizza
- 20 grams fresh Yeast
- 100 milliliters lukewarm milk
- 250 grams Pastry flour
- 1 pinch salt
- 30 grams sugar
- 2 egg yolks
- 50 grams soft butter
- butter (for greasing)
- powdered sugar
- 600 grams red Berry (mixed)
- 2 tablespoons Strawberry fruit spread
- 3 tablespoons Mascarpone
- 1 tablespoon Whipped cream
- 1 tablespoon mint
- 2 tablespoons Shelled pistachio (finely chopped)
For the pizza base, dissolve the yeast in the milk. Combine the flour with the salt, sugar and egg yolks in a bowl and stir in the yeast milk. Add the butter and knead with the dough hook of an electric hand mixer to form a smooth dough. Cover and leave for about 60 minutes in a warm place.
Preheat the oven to 160°C (approximately 325ºF).
Pick out and rinse the berries. Knead the dough again and roll out on a floured work surface. Place on a greased baking sheet and coat with the jam. Top with about 500 grams of berries (approximately 18 ounces).
Shower with 2 tablespoons of powdered sugar and bake for 25-30 minutes.
Mix the mascarpone with the cream.
Spoon small dollops of mascarpone on the hot pizza and dust with powdered sugar. Shower with the remaining fresh berries.
Serve garnished with mint leaves and pistachios.
