3.333 cups Cherries (pitted)
¾ cup all-purpose flour
1 pinch salt
¼ cup superfine caster sugar
3 eggs (beaten)
1.333 cups milk
1 Tbsp Cherry brandy (Kirsch, optional)

Preparation steps

1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Grease a baking tin with butter or vegetable oil, then place the cherries in the bottom.
3.
In a bowl, whisk together the flour, salt and sugar and the beaten eggs until smooth, then whisk in the milk and and kirsch if using. Mix to a smooth batter.
4.
Pour the mixture over the cherries and bake for 35-40 minutes.
5.
Allow to cool before serving.
