Sweet Apple Dumplings with Sauce
- For the dough
- 50 grams Semolina flour
- 100 grams Pastry flour
- 1 egg
- 1 egg yolk
- 1 pinch ground cinnamon
- 20 grams powdered sugar
- 1 pinch salt
- For the filling
- 250 grams Apple (about 1 large apple)
- 1 teaspoon lemon juice
- 250 milliliters milk
- 80 grams sugar
- ½ packet Vanilla pudding (for boiling in 250 ml milk)
- 2 tablespoons Semolina
- Pastry flour (for dusting)
- 1 egg white
Combine the dough ingredients. Shape into a ball, brush with a little vegetable oil, wrap in cling film and chill about 1 hour in the refrigerator.
Peel the apples, quarter, core and grate, mix with lemon juice. Boil 200 ml (approximately 7/8 cup) of milk and 50 grams (approximately 2 ounces) of sugar in a saucepan. Stir the remaining milk with the pudding powder until smooth and stir into the boiling liquid. Stir in semolina. Pull the pudding from the heat and let cool.
Roll out the dough very thin on lightly floured surface. Approximately cut out 8 cm (approximately 3 inch) circles. Drain the apples and mix into the pudding. Place 1-2 tsp filling on one half of the circle, paint the edges with egg white and fold up, pressing firmly.
Rinse the apples, quarter, remove seeds and cut into thin wedges. Melt the butter in a saucepan, put in sugar, schnapps and apples. Slightly braise.
Boil abundant water in a pot and gently place the dumplings inside. Then turn the heat down and cook over medium heat until done, 3-4 minutes.
Spread the apples with apple sauce on plate, arrange dumplings on top and serve dusted with cinnamon and powdered sugar.
