4 dried, Chinese Morel
2 garlic
2 slices Pineapple (canned)
50 grams Cucumber
1 onion
2 scallions
2 tomatoes
3 tablespoons White vinegar
4 tablespoons honey
1 tablespoon soy sauce
2 tablespoons Palm sugar
1 tablespoon Tomato paste
2 teaspoons cornstarch
4 tablespoons Pastry flour
½ liter vegetable oil
salt (and pepper)

Preparation steps

Rinse duck, pat dry and cut into large cubes. Soak mushrooms in warm water for 5 minutes. Drain, squeeze and cut in half. Peel and mince garlic. Drain and dice pineapple. Peel and dice cucumber. Peel and mince onion. Rinse scallions and cut into strips. Blanch tomatoes, shock with cold water, peel and coarsely chop.

Bring a large pot of vinegar, honey, soy sauce, sugar, tomato paste and garlic to a boil. Combine equal parts cornstarch and water, then whisk into mixture to thicken. Season with salt.

Combine flour, salt and pepper and dredge duck in flour mixture. Heat oil in a wok and cook duck on all sides. Add pineapple, cucumber, tomato, onion, scallions and morels to pan, let it boil.
