100 milliliters lukewarm milk
15 grams fresh Yeast
1 tsp Maple syrup
300 grams Whole wheat flour
250 Pastry flour
200 grams Whole Grain Rye Flour
2 tsps salt
1 tsp ground Caraway

Preparation steps


Stir together the lukewarm milk, yeast and maple syrup. Let stand for about 5 minutes. Sift the three flours, salt and cumin into the bowl of a stand mixer. Make a well in the center of the flour mixture and add the milk-yeast mixture and about 200 ml of lukewarm water. Knead with the dough hook attachment until smooth and elastic. Cover and let rest in a cool, dry area for about 10-12 hours. 


Preheat the oven to 250°C (approximately 480°F). Transfer the dough to a floured surface and knead a few times with hands. If the dough seems too sticky knead in a bit more flour. Divide the dough into 10-12 pieces and roll into balls. Roll each ball out onto the floured surface until as thin as possible. Place the dough circles onto the prepared baking sheet and cut a small hole in the center of each one using a small cookie cutter. Prick the circles all over with a fork and bake for 8-10 minutes, until golden brown. Remove from the oven and let cool. Stack together and tie with kitchen twine or ribbon if giving as a gift.
