Preparation steps

Cut vanilla bean in half lengthwise and scrape out the seeds with a sharp knife. Boil the vanilla seeds with 450 ml (approximately 1 3/4 cups) of milk and 2 tablespoons sugar in a small pot.

In a small bowl, combine 5 tablespoons milk and 40 grams (approximately 2 tablespoons) of cornstarch until smooth and stir into the milk mixture. Bring to a boil, then immediately pour into a bowl and let cool for about 10 minutes.

Separate 1 egg (reserve the white for another use). Whisk the egg yolk into the warm vanilla milk.

Beat butter and 80 grams (approximately 1/4 cup)  sugar with a hand mixer in a mixing bowl until creamy. Stir in remaining eggs one at a time.

Mix together flour, baking powder and remaining cornstarch in another bowl. Add to the egg mixture along with remaining milk and stir briefly until a firm dough forms.

Line a baking sheet with parchment paper. Drop tablespoons of dough (about 12) onto the parchment. Bake in preheated oven at 200°C (fan 180°C, gas: mark 3) (approximately 400°F) until golden brown, 12-15 minutes.

Remove baking sheet from the oven. Let cookies cool for 8 minutes on the sheet, then transfer to a wire rack, with the flat side up, and let cool for 30 minutes more.

Drain apricots well, collecting the juice in a bowl. Add water to juice to make 250 ml (approximately 1 cup) of liquid.

Mix remaining sugar and glaze powder (or cornstarch) in a small pot. Stir in the juice mixture. Bring to a boil, stirring frequently. Remove the pan from the heat.

Place 1 tablespoon of the vanilla custard on the flat side of the cookie and spread out evenly. Then place 1 apricot, flat side down on each cookie. Drizzle 1 tablespoon of glaze over each apricot. Let stand for about 5 minutes before serving.
