5 bay leaves
8 ozs olive oil (to fill)

Preparation steps

Preheat the oven to 110°C (approximately 230°F). Rinse the tomatoes, remove the core, and remove the pulp (this shortens the drying time). Place on a baking sheet lined with parchment paper. Sprinkle with salt, and dry in the oven for 6-8 hours. Prop the oven door open with the handle of a wooden spoon. Turn the tomatoes every 30 minutes. The tomatoes should be pliable when done, but not too tough or too moist.

Divide into 4 jars with the slices of garlic and bay leaves. Fill with enough olive oil to cover and seal tightly.
