- For the sorbet
- 2 cups fromage blanc
- ⅔ cup powdered sugar
- 0.333 cup cold water
- ½ tsp vanilla extract
- For the summer fruit
- 1.333 cups Raspberries
- 1 ⅔ cups Strawberries (halved)
- ¾ cup Red currant
- 2 Tbsps caster sugar
Preparation steps

Combine the water, icing sugar and vanilla extract in a saucepan. Bring to a simmer, stirring occasionally, until you have a clear syrup. Remove from the heat and let it cool.

Once cool, combine the fromage blanc and the syrup in a mixing bowl, whisking until well combined.

Churn in an ice cream maker, according to the manufacturer's instructions, until you have a firm, set sorbet. Transfer the sorbet to a freezable container and freeze overnight.

Before serving the dessert, combine the summer fruits in a large mixing bowl and add the caster sugar. Toss a few times before spooning half of the fruit into the base of 4 serving glasses.

Top with a few small scoops of the sorbet, then top with the rest of the summer fruits. Serve immediately.
