For the pancakes
130 grams Pastry flour
2 tablespoons sugar
1 packet Vanilla sugar
1 pinch salt
6 eggs
250 milliliters milk
2 tablespoons raisins
2 centiliters Rum
clarified butter (for baking)
1 tablespoon powdered sugar
powdered sugar (to sprinkle)
For the compote
4 tart Apple
lemon juice
100 grams sugar
200 milliliters water
1 Vanilla bean

Preparation steps

1.

For the compote, peel apples, cut in half, remove seeds, cut into 1 cm (approximately 1/2 inch) wide slices, then cut in half crosswise and immediately sprinkle with lemon juice so slices do not brown.

Place apple slices in a saucepan with water, sugar and vanilla pod, simmer for about 10 minutes until al dente. Let cool.

For the pancakes, separate eggs. Mix flour, salt, powdered sugar, sugar and egg yolks to the bowl. Whisk well and let rest for 30 minutes. Soak raisins in rum. Beat egg whites in a bowl until stiff.

Stir pancake batter again, add egg whites and fold in gently. Melt butter in a large ovenproof skillet, pour in pancake batter and fry into 1 thick pancake, turn over and finish baking.

5.

Tear pancake into small pieces, add rum-soaked raisins, sprinkle with powdered sugar and caramelize under a preheated oven broiler, watching carefully.

6.

Dust pancakes with powdered sugar before serving and serve with apple compote.
