6 tablespoons vegetable oil
4 Veal cutlets (each about 140 grams)
4 slices Cheese (such as Emmentaler)
4 slices cooked ham
salt
peppers
100 grams Pastry flour
2 eggs
½ teaspoon finely grated untreated Lemon peel
150 grams breadcrumbs
4 tablespoons Caper

Preparation steps

1.

Brush two layers of plastic wrap with a little oil. Arrange veal cutlets on one layer and cover with another, flatten with a meat mallet. Spread each cutlet with  a slice of cheese and ham, fold in and season with salt and pepper.

2.

Place flour in a deep plate. Beat eggs with lemon zest and place into another plate. Place breadcrumbs into third one. 

3.

Coat cutlets with flour, dip into eggs and cover with breadcrumbs, pressing lightly.

4.

Heat about 5 tablespoons of oil in a wide pan. Cook cutlets for about 3-4 minutes per side or until golden brown. Drain on paper towels. Arrange with capers on plates.

5.

If desired, serve with green salad.
