Stuffed Fruit with Soft Ice-cream

To make the ice cream puree the cheese together with the cream. Stir in the double cream and season with salt and nutmeg. Pour into an ice cream maker and stir until the mixture thickens. Transfer to a bowl and freeze for 3-4 hours.
Cut the tops off the pears and remove the cores. Heat the wine and the spices in a pot and poach the pears in the mixture for around 10 minutes with a lid on. Remove the pears and leave to cool.
Defrost the ice cream slightly and fill it into a piping bag. Pipe the ice cream into the pears, place the tops back on and serve on a wooden chopping board.
