Preparation steps

For the pastry, mix together egg, vinegar, water and oil in a cup. Mix flour, salt and sugar together in a bowl. Slowly add the liquid to the flour mixture while continuously kneading with an electric mixer (dough hook). Knead dough for about 15 minutes until a smooth, elastic, shiny dough is formed. Put dough on a floured surface and beat dough until no air is left and waves form inside when cutting apart. Wrap dough in plastic wrap and let rest in a warm place at least 30 minutes.

Preheat the oven to 200°C (approximately 400°F). Line a baking sheet with parchment paper. For the filling, toast almonds in a dry skillet until golden brown, stirring constantly and put on a plate. Rinse apples and pears, peel, quarter, core and cut into thin slices. Mix lemon juice, cinnamon, sugar, vanilla, amaretto, raisins, almonds and 50 grams (approximately 3 ounces) cream. Divide pastry into 6 equal pieces. On a floured kitchen towel, roll out dough and then pull out with your fingers until dough as thin as possible. Dough should be at least about 25 x 20 cm (approximately 8 x 10 inches) in size. Brush dough with a little butter and sprinkle with breadcrumbs. Distribute 1/6 of filling on the bottom third of dough. Fold in the sides of dough and roll up the bottom using the kitchen towel. Place on the baking sheet with the seam side down. Form remaining dough into swirls and place on the baking sheet. Brush strudel with remaining cream and bake in a preheated oven for approximately 35 min. Serve garnished with powdered sugar.
