- 4 eggs
- 1 pinch salt
- 100 grams sugar
- 2 egg yolks
- 125 grams Pastry flour
- ½ tsp Baking powder
- 1 packet Vanilla sugar
Separate the eggs. Whisk the egg whites and salt until stiff.
Beat the egg yolks and sugar until creamy. Mix in the flour, baking powder and vanilla sugar. Fold in the egg whites.
Line a baking tray and pour in mixture, spread thick (approximately 1 cm) until smooth.
Bake in preheated oven (200°C/approximately 400°F) for 8-10 minutes. Remove cake from pan and place on a damp paper towel. Roll up the dough in the paper towel. Allow to cool.
Rinse strawberries and pat dry. Cut half of the strawberries into small cubes. Crush the remaining with a fork. Mix the cut strawberries with the powdered sugar.
Whip the cream with the stabilizer until stiff. Mix the quark with the crushed strawberries, lemon peel and strawberry mixture. Add the whipped cream.
Roll up the jellyroll, sprinkle with strawberry quark, leaving a margin. Roll again using the paper towl. Slide on a plate to be dusted with powdered sugar.
Insert candles if desired. Serve.
