Strawberry Roll Cake
Preheat the oven to 200°C / 400°F. Line a baking sheet with parchment paper.
Separate eggs. Whisk egg yolks, 3 tablespoons water and sugar for 5 minutes until mixture is frothy. Gradually fold in flour with a wooden spoon. Beat egg whites and salt until stiff and fold into dough. Spread dough on a baking sheet and bake for 10-15 minutes. Remove and release onto a sugared tea towel, remove parchment paper and use cloth to roll up. Let cool.
Unroll pastry and spread with jam. Roll up again and chill for at least 2 hours.
Dust with powdered sugar, slice and serve.
