150 grams Quark
4 Tbsps milk
6 Tbsps vegetable oil
75 grams sugar
For the topping
1 packet Vanilla sugar
3 eggs
1 egg white
400 grams Quark
1 tsp grated Lemon peel
40 grams butter (melted)
1 tsp Baking powder
50 grams Semolina flour
5 Tbsps sugar

5 pretty Strawberries
1 Kiwi
½ packet light Pie glaze
Pastry flour (for dusting the cake pan)

Preparation steps

Grease a springform pan with some butter and dust with flour.

For the dough, mix the quark with milk, oil and sugar. Mix the flour with baking powder and stir in the remaining ingredients. Roll out the dough onto a floured surfacd into a round slightly larger than the springform pan so it will have an edge.

Separate the eggs. Mix the yolks with the quark, melted butter and lemon zest. Mix the baking powder and flour and mix with the sugar. Beat the 4 egg whites until stiff and sprinkle with the vanilla sugar. Fold the meringue into the quark-egg mixture and spoon into the springform pan. Bake in an oven preheated to 180°C (approximately 350°F) on the middle rack. Bake about 50 minutes, turn off the oven and let it stand in the oven with the door slightly opened for about 10 minutes then remove and allow to cool.

Rinse, trim and halve the strawberries. Peel the kiwi, halve lengthwise and cut into slices.

Top wthe cake decoratively with strawberries and kiwi. Prepare the glaze according to package directions, pour over the fruit and let stand until firm.
