50 grams Pastry flour
50 grams cornstarch
3 egg yolks

2 sprigs mint

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Separate the eggs. Whip the egg whites with lemon juice until stiff. Sprinkle in sugar while whipping to form a glossy meringue. Mix the flour with the cornstarch. Quickly mix in the yolks. Fold the flour mixture into the meringue.

Spread the meringue on a parchment lined baking sheet. Smooth out and bake for 10-12 minutes.

Lay out a large, thin kitchen towel. Sprinkle with sugar. Turn out the cake onto the towel. Remove the parchment paper and immediately roll the cake using the kitchen towel. allow to cool.

For the filling: Rinse the strawberries and cut into pieces. Whip the cream with vanilla sugar until stiff. Rinse the mint and pluck off the leaves.

Carefully unroll the cake. Spread the vanilla cream over the cake and sprinkle with berries and mint, leaving a narrow border. Carefully roll. To serve: Dust with powdered sugar and cut into slices.
