250 grams Pastry flour
60 grams fine sugar
1 pinch salt
1 generous pinch grated Lemon peel
125 grams butter
1 egg yolk
6 small Tart paking pans 8-10 cm (approximately 3-4 inches)
400 grams Strawberries
1 Tbsp Orange liqueur
150 grams Mascarpone
75 grams Crème fraiche
2 Tbsps lemon juice
2 Tbsps sugar
6 Lemon balm

Preparation steps

For the tartlet shells: Combine the flour, sugar, salt, lemon zest, butter and egg yolks and mix with a pastry blender or butter knife until combined. Knead until smooth, cover with plastic wrap and chill for about 30 minutes. Preheat the oven to 180°C (approximately 350°F). Roll out the dough on a floured work surface and use to line the tartlet pans. Bake until golden brown, about 15-20 minutes. Let cool slightly then transfer to a wire rack to cool completely.

Rinse the strawberries, hull and halve or quarter, depending on the size. Toss with the orange liqueur. Whisk together the mascarpone, crème fraîche, lemon juice and sugar then spread over the tart shells. Arrange the strawberries on top. Rinse the lemon balm, pat dry and cut into fine strips. Use to garnish the tartlets.
