150 grams Pastry flour
100 grams butter
1 tablespoon sugar
½ teaspoon salt
1 egg
Legume (for blind baking)
400 grams Strawberries
Strawberry sauce (for decorating)
150 grams Quark
200 grams Whipped cream
½ teaspoon Bourbon vanilla
1 teaspoon Rose water
1 tablespoon sugar
Rose petal (approx. 6 fresh roses)

Preparation steps

Mix the flour, butter, sugar, salt and egg to create a pastry dough. Wrap in foil (or parchment paper) and refrigerate for one hour.

Divide the dough into the molds and hand flatten (or using cling wrap and flatten with a rolling pin). Trim any excess from the edges of the tart pans. Preheat the oven to 400°F. Pour the legumes into the bottoms of the tart pans and bake until golden brown for approximately 30 minutes.. Let cool. Remove the legumes. Turn out the pastry from the molds.

Rinse and dry the strawberries. Whip the cream. Combine the quark with sugar, rosewater and vanilla bourbon mix, and then stir in the cream. Fill the tart with the mixture and top with the strawberries. Drizzle with strawberry sauce and let set for approximately 30 minutes. Serve chilled and sprinkled with reserved rose petals.
