150 grams sugar
200 grams softened butter
2 tsps Baking powder
1 pinch salt
1 lemon (zested)
175 grams Pastry flour
120 milliliters milk
300 grams Double cream cheese (60-75% fat)
40 grams powdered sugar
2 Tbsps Strawberry syrup (or strawberry puree)

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F) on the convection setting. Line a muffin tin with paper baking cups.

Beat the eggs and sugar until fluffy. Add 120 g (approximately 4 ounces) butter and mix well. Mix the baking powder, salt, lemon zest and flour into the egg mixture and then stir in the milk. Pour the batter into the muffin tin and bake for about 25 minutes.

3.

Beat the remaining butter until fluffy. Add the whipping cream, powdered sugar and strawberry syrup and mix well. Put the frosting in a piping bag and decorate the cupcakes with it.

4.

Garnish with strawberry slices and serve.
