175 grams butter
150 grams sugar
4 eggs
1 fresh lemon (for juice and zest)
175 grams Pastry flour
40 grams ground almonds
½ tsp Baking powder

350 grams Strawberries
120 grams soft butter
60 grams sugar
120 grams cream cheese
150 grams powdered sugar

Preparation steps

 Line muffin baking tray with muffin liners.

Beat butter with sugar until fluffy. Beat eggs with lemon juice and zest, combine with butter mixture. Combine flour, almonds and baking powder, add to butter mixture, mix well. Pour batter into muffin cups. Bake in preheated oven at 180°C (approximately 350°F) for 15-20 minutes or until golden brown. Remove from oven, let cool slightly, remove from pan and cool completely.

Rinse, dry, hull and halve strawberries. Mash 4-5 halves finely with a fork. Mix butter with sugar until creamy, stir in cream cheese and strawberry puree. Add as much powdered sugar as desired, mix well. Put frosting into a piping bag with a serrated nozzle, frost cupcakes. Garnish with remaining strawberry halves and serve.
