Summer berries nicely rolled up: Not only delicious, but also healthy! strawberries contain more folate (folic acid) than almost any other fruit. The body cannot produce this B-vitamin itself, but needs it for cell division, among other things. Strawberries are therefore perfect for expectant mothers, because the vitamin protects the unborn child.

Outside the strawberry season you can also choose other fruits. How about apricots, nectarines,raspberries or blueberries, for example?


For the cake
5 eggs
1 pinch salt
4 ozs sugar
3 ½ ozs Pastry flour
2 Tbsps cornstarch
1 Tbsp Vanilla
sugar (to sprinkle)
For the filling
18 ozs Strawberries
8 ozs Whipped cream
1 packet whipped cream stabilizer
8 ozs Sour cream
2 Tbsps lemon juice
3 Tbsps powdered sugar
powdered sugar (for dusting)

Preparation steps


Preheat oven to 200°C / 400°F. Separate eggs. Using electric mixer, beat egg white with salt until stiff. In a separate bowl, beat yolk with sugar until creamy. Mix in and stir the flour with the cornstarch and vanilla until it becomes a dough. Gradually add dough into egg white.


Pour mixture on a baking sheet lined with parchment paper. Spread evenly.


Bake in preheated oven for approximately 10-12 minutes until golden brown. Remove and pour onto a sugar-lined kitchen cloth. Peel off the parchment paper and roll up cake in the cloth. Allow to cool. 


Rinse the strawberries, pat dry and chop. Whip the cream and sour cream until stiff. Whisk in 2-3 tablespoons of the whipped cream to the powdered sugar and lemon juice to form a smooth mixture. Add the rest of the cream to the strawberries in a separate bowl.


Spread whipped cream over strawberry mixture.  


Roll up firmly using kitchen towel to form a tight roulade. Sprinkle with powdered sugar. Serve sliced.
