250 grams Strawberries
6 sheets clear gelatin
500 grams Quark
2 eggs
70 grams sugar
1 packet Vanilla sugar
1 tablespoon lemon juice
4 centiliters Grand Marnier
1 pinch salt
300 grams Whipped cream
For decoration
4 tablespoons Strawberry Jam
600 grams small, beautiful Strawberries
1 packet clear Pie glaze (or cornstarch)
4 tablespoons slivered almonds
1 tablespoon chopped Pistachio

Preparation steps

Make a mound with the flour and almonds on a work surface. Mix with sugar and salt and make a well in the center. Cut the cold butter into small pieces and sprinkle around the flour, crack the egg into the center and mix all the ingredients with a pastry knife. Quickly knead into a dough with your hands, form into a ball, and wrap in plastic wrap. Place in the refrigerator for about 30 minutes to cool.

Roll out the dough on a floured surface and line the greased springform pan, creating an edge up the side. Cut a piece of parchment paper to size and place on top of the crust and weight the crust with beans or pie weights. Bake in a preheated oven (180°C) (approximately 350°F) 25 minutes or until the pastry is browned.

Remove from oven, let cool, remove beans and parchment paper and leave to cool in the form.

For the filling, rinse the strawberries, remove stems and cut into cubes.

Soak the gelatin in cold water.

Separate the eggs. Mix the yolks with quark, sugar, vanilla sugar, lemon juice and Grand Marnier.

Dissolve dripping wet gelatin in a small saucepan over low heat. Mix with a small amount of the quark mixture, then stir into the entire quark mixture and refrigerate.

Whip egg whites with a pinch of salt until stiff. Whip the cream. Fold both into the quark mixture, put back in the refrigerator and once it begins to set, mix in chopped strawberries.

Spread strawberry cream on the baked dough and set for 3 hours in the refrigerator.

Rinse strawberries, remove stems and cut in half.

Mix strawberry jam with about 1 tablespoon of water and coat the cake with it.

Toast almonds in a dry pan briefly.

13.

Top the cake with strawberries and remove from springform.

Make a cake glaze by mixing some cold water with cornstarch and powdered sugar and cooking briefly until shiny and thickened slightly. Coat the entire surface with a thin layer and sprinkle the edge of the cake with toasted almonds. Decorate the cake with chopped pistachios and mint leaves, slice and serve.
