Preparation steps

1.

Blanch the peaches in a pot of boiling water for 15 seconds or until the skin can be removed. Rinse under cold water, peel, cut in half, remove the pits and cut into small pieces.

2.

Rinse and hull the strawberries. Slice one third of the strawberries and cut the remaining strawberries into small pieces.

3.

Soak the gelatine in cold water. In a bowl, combine the quark with the cream cheese, syrup and sugar.

4.

Place the peach juice in a saucepan and heat over low until warm. Squeeze the gelatine and dissolve it in the peach juice.

5.

Stir 2 tablespoons of the quark mixture into the dissolved gelatin then mix together with the remaining quark mixture. In a bowl, beat the whipping cream until stiff and fold into the quark mixture.

6.

Line a loaf pan 30 cm (12-inches) long with plastic wrap and scatter the bottom with the strawberry slices.

7.

Mix together 2/3 of the quark mixture with the strawberry and peach pieces and spread on the strawberry slices. Spread the remaining quark mixture over the slices and smooth the top. Cover with plastic wrap and refrigerate until set, at least 4 hours.

8.

Unmold the terrine onto a plate, remove the plastic wrap and cut the dessert into 12 pieces.
