For the dough
8 egg yolks
8 egg whites
250 grams sugar
2 packets Vanilla sugar
160 grams Pastry flour
120 grams cornstarch
2 teaspoons Baking powder
For the topping
8 sheets white gelatin
250 grams Double cream
350 grams Whipped cream
300 grams Strawberries
100 grams Strawberry Jam
100 grams powdered sugar
For decoration
Strawberries
Whipped cream
chopped Pistachio

Preparation steps

Beat egg whites until stiff while sprinkling in vanilla sugar. Whisk egg yolks and sugar until creamy. Combine cornstarch, flour, and baking powder and stir into yolk mixture.  Fold in egg whites at the end. Spread onto a parchment-lined baking tray and bake at 175°C (approximately 350°F) for 15-18 minutes. Turn out onto a damp tea towel, leave to cool.

For the topping, soak gelatine in cold water.

Beat heavy cream, double cream and powdered sugar until stiff. Rinse and clean strawberries and puree together with strawberry jam. Dissolve soaked gelatin in a small saucepan over low heat and stir in about 3 tablespoons strawberry puree. Add the remaining strawberry puree and mix well. Fold in the whipped cream mixture, spread on the dough and smooth. Refridgerate for at least 3 hours.

To serve, decorate with sliced ​​strawberries and whipped cream rosettes and sprinkle with pistachios.
