Strawberry and Cherry Compote with Yogurt Sauce
Strawberries are full of vitamin C, a the water-soluble vitamin which helps support a healthy immune system. The cherries provide valuable antioxidants, which protect the body's cells from damaging free radicals.
If you want to give this sweet snack a tropical touch, replace the almonds with coconut flakes and the cow's milk yogurt with coconut yogurt.
Rinse strawberries, pat dry, trim and halve or quarter depending on size.
Caramelize sugar in a saucepan. Deglaze with port wine, dissolve caramel in it and pour red wine (up to 2 tablespoons) and lemon juice. Add vanilla pod. Mix cornstarch with remaining red wine and stir in, allow to thicken, then remove from the heat, mix in strawberries and cherries and let cool. Remove the vanilla pod. Serve lukewarm or cold as desired in bowls, each with tablespoons of yogurt and some almond slices.
