100 grams Milk chocolate
½ Vanilla bean
200 milliliters milk
150 milliliters Whipped cream
4 egg yolks
60 grams sugar
50 grams dark Chocolate shaving

Preparation steps

Chop the milk chocolate and place in a bowl. Place over a pot of simmering water and stir until melted. Halve the vanilla bean lengthwise and scrape out seeds with a sharp knife. Combine the vanilla bean seeds, vanilla bean pod, milk, sugar and egg yolks in a bowl. Place over a pot of simmering water and beat until very thick and creamy. Remove from heat and stir in the melted chocolate. Stir until cold (place in a bowl of ice water if necessary).  chocolate and stir until cold (possibly in ice water). Remove the vanilla bean pod. Stir in the heavy cream and chocolate shavings.

Pour the cream mixture into a dish and place in the freezer for 3 hours, stirring occasionally. Alternatively, freeze in an ice cream maker.

To serve, scoop the ice cream into bowls and serve with sweet breadsticks if desired.
