Stewed Berry Whippy

Preheat the oven to 200°C (180 fan) | 400°F | gas 6.
Put the fruit in a saucepan with the sugar and vanilla and cover with a lid. Cook it over a medium heat for 5 minutes, stirring occasionally, then discard the vanilla pod and spoon the compote into 6 oven-proof glasses or bowls.
Whisk the egg whites until stiff, then gradually add the sugar and whisk until the mixture is thick and shiny. Spoon the meringue into a piping bag, fitted with a large star nozzle, and pipe a big swirl of meringue on top of each compote.
Bake for 10 minutes or until the tops are golden brown.
