Preparation steps

Wash, sort and hull the strawberries and put into a bowl.

Mash with a potato masher.

Squeeze the lemon juice into the strawberries and mix.

Stir in the sugar.

Stir in the cream.

Transfer the mixture to an ice cream maker and freeze.

Alternatively, transfer the mixture to a wide metal dish and put into the freezer. Stir vigorously every 20-30 minutes for the first 2-3 hours to prevent any large ice crystals from forming. Freeze the ice cream for 5 hours altogether.
