Vanilla sugar (or sugar mixed with a little vanilla flavouring)

Preparation steps

1.
Sprinkle the strawberries with vanilla sugar and leave to stand.

Put the egg yolks and sugar into a metal bowl and beat until creamy.
3.
Put the milk and cream into a pan and bring to the bowl. Then pour on to the egg yolk mixture in a thin stream, beating continuously.
4.
Continue beating over a bain-marie until the custard coats the back of a wooden spoon. Place the bowl in cold water and beat until cold.
5.
Puree the strawberries in a liquidiser or with a hand blender and fold into the custard. Transfer to an ice cream maker and churn for about 30 minutes.
6.
Serve in bowls with home-made vanilla ice cream.
