Preparation steps

Soak raisins in rum.

Mix flour and salt in a bowl and press a well in the center. Crumble yeast and stir with 1 tablespoon sugar and 3-4 tablespoons milk until smooth. Add yeast mixture to well in flour and sprinkle with flour from around edge of bowl. Cover bowl and let stand in a warm, draft-free place about 20 minutes.

Knead butter, remaining sugar, lemon zest and remaining milk into flour mixture to a smooth dough. If dough is too dry or too sticky, add a bit more milk or flour. Knead raisins, candied lemon and orange peel and almonds into dough (figure 1). Cover dough and let rise about 45 minutes.

Preheat oven to 180°C (approximately 350°F).

Roll out dough to a rectangle about 20 x 30 cm (approximately 8 x 12 inches). To form stollen, fold both long edges inward toward the center and press down gently (figure 2). Place stollen on a baking sheet greased with butter and let rise another 15 minutes. Bake in preheated oven about 1 hour.

Remove stollen to a wire rack and brush with melted butter (figure 3).

Allow stollen to cool and dust with powdered sugar to serve (figure 4).
