200 grams shrimp (ready to cook peeled and deveined)
1 scallion
1 teaspoon freshly grated ginger
1 teaspoon sesame oil

Preparation steps

Mix together wheat starch and 100 ml (approximately 1/2 cup) boiling water gradually to make a smooth dough. A little more or less water may be used depending on consistency. Roll out very thinly and cut out circles about 8-10 cm (approximately 3-4 inches) wide.

For the filling, rinse the shrimp, pat dry and finely chop. Rinse and trim the scallions and finely chop. Mix well with the shrimp, ginger, oil, and sugar. Season with salt to taste. With a spoon, place the filling on the center of each circle. Fold the circles in half and seal the edges well, creating a decorative zigzag pattern. Steam dim sum in bamboo baskets boiling water for about 8 minutes.

To serve, sprinkle the dim sum with soy sauce, sesame seeds and cilantro leaves.
