200 grams sugar
1 packet Vanilla sugar
250 grams butter
1 egg white
120 grams ground Hazelnuts
150 grams Quince jelly
100 grams powdered sugar

Preparation steps

Mix together the flour, baking powder, sugar, vanilla sugar, small pieces of butter, egg and ground hazelnuts. Knead briefly, shape into a ball, wrap in plastic wrap and refrigerate for 30 minutes.

Roll out the dough on a floured surface about 0.4 cm (approximately 1/8 inch) thick and cut out with a star-shaped cookie cutter (about 6 cm diameter) (approximately 2 inches). From half of the cookies, cut out smaller stars in the center. Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven (180°C) (approximately 350°F) for about 12 minutes. Remove and let cool.

Mix the powdered sugar with a little water to form a thick icing and pour into a pastry bag.

Decorate the cookies with the star shaped hole with the icing. Sprinkle with granulated sugar and leave to dry.

Warm the jelly and spread over the cookies without holes. Place the iced cookie halves (with holes) on top. Let the cookies set and serve.
